Spaghetti with Poached Salmon

I’ve made this recipe two ways and both are very good. The first is lightly poaching the salmon in the pasta sauce and the second is using some leftover broiled salmon from the night before. The key to both methods is not to over cook the salmon.

The only other interesting ingredient is the Parmesan cheese. Normally, in Italy, pasta with fish or seafood do not include cheese, but it works well here.


1 lb Spaghetti
2 cups fresh Salmon, cut into 1/2 inch cubes or 2 cups cooked Salmon, flaked with a fork.
3 Tbsp Butter or Earth Balance.
Juice of one Lemon
1 medium Shallot, peeled and thinly sliced
1-2 cloves of Garlic, peeled and chopped
3/4 cup White Wine
1/4 tsp Sea Salt, this is only for the sauce, you will need 2 Tbsp for the pasta water.
Freshly ground Black Pepper

Sprinkle of Chili Flakes, optional
Freshly grated Parmesan Cheese, about 1 cup.

Start the water for your pasta in a large pot with lots of water, and while you were waiting for the water to boil, begin making your sauce.

Add the butter to a small sauce pan. After it melts, add your garlic and shallot and gently simmer. Add 1/2 half of your salt, black pepper and chili flakes if using.

Once the water is boiling, salt the water liberally and place your spaghetti into the water.

Add the wine and lemon juice into the sauce pan and bring it up to a lively simmer. You want to to reduce it down a bit.

When you have about 2 minutes left until the pasta is cooked to very al dente, d
ip out a bit of the pasta water (a Pyrex measuring cup is perfect for this) and set it aside.

Add your raw salmon and remaining sea salt to the sauce pan and gently poach it in the simmering sauce. As it begins to poach, gently break it into random pieces with your spoon or spatula.

When the pasta is very al dente, drain it and then put it back into the pan. Add the entire sauce mixture from the sauce pan, including the salmon and put the heat on low and stir gently with the cheese and reserved pasta water as needed to coat and finish the pasta. This will take about 2 minutes. You may not need need all of the pasta water. You don't want it to be watery. Serve immediately.

Note: If using pre cooked salmon, add it at the very end and just heat it through. It doesn’t need much, as it’s already cooked.

Norfolk Style Seafood

This is such a good recipe and so simple to make. The story behind this recipe is interesting. When I was a young boy, we used to go to a seafood restaurant in Washington DC called O'Donnell's. They had wonderful food, and most importantly, they had Buck.

Marlow and Son’s Butterbeans, Garlic Confit and Preserved Tomatoes

I first saw this recipe in Bon Appetit and was fascinated. It used interesting ingredients combined in a unique way and I had to try it. The recipe was given in response to an email from BA writer to Marlow chef Patch Troffer, but the recipe had no measurements and timing. After making it, I adjusted a few things and added quantities and timing and was very happy with the results. I ordered my dried beans from Rancho Gordo in Napa and they were excellent.

To make it spectacular, you really do need to make the garlic confit and preserved tomatoes. They aren’t hard to make, but set aside a bit of time. Make a full recipe and then use the rest for other dishes.
Garlic Confit
3 heads of Garlic, peeled and left whole.  3/4-1 cup Olive Oil  4 springs fresh Thyme  2 Bay Leaves 2 dried Chili Peppers

Oven Roasted Salmon

This has to be one of the easiest and best tasting recipes I have. I developed it so I could always pull together a healthy dinner in a few minutes and then have beautiful cold salmon leftovers for the next day.

All you need is a nice piece of fresh salmon and a few basic spices. The real key is to get the oven very hot, so it sears the outside of the salmon and locks in the juices.


2 lb filet of Fresh Salmon, skin on is best, but not essential.
Celery Salt
Dill Weed
Roasted Garlic Powder
Freshly ground Black Pepper
1 Tbsp Butter
Parchment Paper

Preheat your oven to 550F. Take your parchment paper and put it onto a 1/2 sheet baking pan and lay your salmon onto the paper.

Melt your butter and brush it onto the salmon filet. Sprinkle on your spices to taste and bake for 10-15 minutes, depending on the thickness of the salmon. Remove and allow it to rest for 3 minutes before serving. It goes well with the seafood rice pilaf I featured in an earlier post.
